Looking for dinner plans this evening, and every Monday hereafter? Friends of Italian food — which I assume is nearly everyone — this one's for you. Dutch & Co. launches its new, limited pasta menu tonight, where you'll be able to find a trio of noodle and risotto dishes from the restaurant's chef de cuisine, Paul Winston, each Monday.
Modeled loosely after a primi menu, from which you'd traditionally order a pasta-heavy first course, Dutch's new pastas will be available in addition to the restaurant's regular menu, and any of the three plates will be an interchangeable entrée in the Church Hill staple's beloved prix fixe menu.
“The first restaurant I worked in was an Italian restaurant," says Winston of his culinary start in Vermont. "I started there as a dishwasher and slowly worked my way up to sous chef ... so Italian food has been kind of the base of my culinary experience — that’s what I know best, those are the flavors I know. Pasta is kind of like my home with my cuisine, my influence.”
Price points will vary each week, though tonight's dishes are all $12 each; this evening you'll find pappardelle with chicken liver and sage, black truffle risotto with Parmesan, and gnocchi with chestnuts and Appalachian cheese.
“Everybody loves pasta!" says Winston, who has also worked at Acacia Mid-town. "It’s so simple, and that’s what [our night] is gonna be: simple food.”
Dutch & Co. is located at 400 N. 27th St., and opens this evening at 5 p.m.
